At this fun, hip bohemian style tacoria he is enabled to perfect and fine tune flavors based on seasonal, local, and regional ingredients in the beatiful enchanted state of New Mexico.
Chef Javier comes from a loving family with his main culinary influences bestowed by his mother and granmother. One of Javi's ultimate goals is to preserve and grow his familys farm and ranch which is located in rual Espanola, located just outside of Santa Fe. This area is rich in culture and promienatley perrered New Mexican traditions and flavors
