Meaning of Verdes

We are Green focused! We utilize many methods of sustainability within our operation by recycling, composting, organic growing, and by using Eco Products service ware.  When it comes to day to day duties we strive to be a Zero waste kitchen. We achieve this by recycling all cardboard, aluminum, plastic, and glass coming into the establishment.  Eco Products are bowls, lids, forks, spoons, and cups all made from 100% compostable sugarcane material.  Any cleaning products we use are biodegradable and earth friendly. We make sure that every task, system of operation, and all flow chart incorporate the least carbon imprint possible. So any inputs to the organization are researched and decided based on this key factor.                                           


All food is utilized to it's furthest extend, and any remaining scraps are added to our compost. The material we used to build are compost bins is made from recycled pallets. All the compost goes through three stages, the first stage is layers of food scrap, coffee, tea, and juicer grinds, fresh grass clipping and leaves from the property. The second bin is formed by flipping the material from the bottom of the first bin so that the bottom material becomes the top, and we add earthworms to help speed and enrich the process. We repeat the bottom to top process to make the third bin once the worms have run their course. We are then able to use the fresh soil to plant new crops for future harvest. 


We source from many local farms some of which grow by Aquaponic and traditional soil bed all of which are organic. We also have three small farms where a majority of our food is cultivated.  It is our objective to take all profits and build our first large Eco Farm. We will be building using Earthship construction methods, growing with Aquaponics, staying off grid by harnessing solar/thermal heating and cooling, rain water collection to source water for our system, and incorporating  Biodynamics .
